- 2 large eggs
- 300 ml (1 1/4 cups) whole milk
- 1 tsp vanilla extract
- 100g (7 tbsp) unsalted butter, melted
- 1 tsp lemon zest (optional)
- Powdered sugar, for dusting
- Whipped cream, fresh fruit, or chocolate sauce, for serving (optional)
Recipe
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract (and lemon zest if using). Mix the wet ingredients into the dry ingredients and stir until smooth.
- Heat your waffle iron according to the manufacturer’s instructions. Lightly grease the plates with cooking spray or a small amount of melted butter. Pour a ladleful of batter onto the preheated waffle iron, making sure to cover the grid evenly. Close the iron and cook for about 3-5 minutes, or until the waffles are golden brown and crisp on the outside. Carefully remove the waffles from the iron and serve immediately. Dust with powdered sugar and top with whipped cream, fresh berries, or chocolate sauce if desired.
